Sriracha Chicken Cheese Dip

If you are looking for THE party dip, then look no further. This little number is a must try! It is so delicious, you will be dipping into it all night.

I don’t know about you, but when we have large gatherings the first appetizer we always have on our prep list is a dip of some sort. This usually falls along the lines of a 7-layer dip, fondue, our family’s beef dip recipe, or a veggie dip. The list goes on. Don’t get us wrong – there is nothing wrong with our tried and true dips, they are delicious, but this year we are wanting to step out of the safety of our go-to recipes and create something new.

And thank goodness we did! Because we came up with our Sriracha Chicken Cheese Dip, it has the perfect amount of heat (not the painful heat that turns you into a fire breathing dragon running for a gallon of milk). Now, you may be wondering, “what do you use to scoop up this cheesy goodness?” – We sliced rustic baguettes to use as the scoop with our dip. It is very difficult to stop at just one. This creamy cheesy dip will definitely become a regular. One that we will be making again and again.

For all you party preppers out there, the perk about this dip is it can be made in advance! As we have said before, we are all about prepping for events the day before and we love “make ahead of time” friendly recipes.

Lets get to prepping!

Sriracha Chicken Cheese Dip

Ingredients

3 boneless chicken breast
16 ounces chicken broth
3 garlic cloves, minced
1/2 tsp coarse black pepper (1/4 in crock pot to cook chicken and the other 1/4 for cheese mixture)
3 Tbsp Blue Cheese dressing
2 cups Mozzarella cheese, shredded
3 cups Coby Jack cheese, shredded
1 cup Kraft grated Parmesan cheese
1 cup Parmesan cheese, shredded (topping)
1.5 Tbsp butter (for sautéing onions)
1 small white onion, diced
2 8-ounce packages cream cheese
2 Tbsp + 2 tsp Sriracha sauce
1 tsp kosher salt
2/3 tsp garlic powder
1 Tbsp chives (topping)
2 baguettes

Instructions

Cook The Chicken

  • In a 4 quart slow cooker place 3 boneless chicken breasts, chicken broth, garlic and black pepper.  Place slow cooker on low and cook for 6 hours.
  • Make sure chicken is cooked all the way through and has reach a temp of 165ºF in the thickest part of the breast.
  • Remove chicken from slow cooker and place in a container to shred.
  • Reserve two ladles full (about 1 cup) of the cooking broth.

Preheat oven to 350ºF

Saute Onions

  • In a medium sautée pan melt butter on medium heat, then add diced onions to caramelize them to a light golden brown; they will become almost translucent when done.

Cheese Dip Mixture

  • In a large bowl combine Mozzarella, Colby Jack, grated Parmesan, cream cheese, Blue Cheese dressing, Sriracha sauce, reserved chicken stock, Kosher salt, Black Pepper, garlic powder.  Mix all together.
  • Mix in chicken and caramelized onions to the cheese mixture. 

Baking the Dip

  • Place dip in a 9x9 pan (we used a stoneware baking pan)
  • Sprinkle shredded Parmesan evenly over the top
  • Bake for 20-25 minutes until it is bubbling.
  • Remove from oven, let cool for 5-10 minutes before serving.
  • Sprinkle chopped chives.

Serve Sriracha Chicken Cheese Dip along with two Baguettes sliced diagonally into 1/2 inch slices.

Notes

If you make the dip the night before your event, please note it will take longer to bake in the oven.  Please allow at least 45 minutes to bake at 350ºF if placing in oven straight from the fridge.
