Southwest Avocado Salad

If you find you are already starting to second guess your New Year resolutions and are in need of a quick healthy meal idea that doesn’t take a lot of prep, look no further. If you have a busy schedule like we do (between raising a kid, career, and life in general), we need something that we can put together and go. Filled with avocado, black beans, corn, onion, and olives you will get all the southwest flavor without having to spend hours in the kitchen, or going on a quick (sometimes delicious) fast food binge. We got you!

Our Southwest Avocado Salad can be paired with our Southwest dressing, or with a salad dressing of your choice. But trust us, you will want to drizzle our Southwest dressing all over this salad.

Southwest Avocado Salad

Ingredients

2 large avocados
15 oz can black beans, rinsed and pat dry
15.25 oz can southwest corn with poblano and red pepper, drained
2.5 oz can sliced olives, drained
2/3 cup red onion, diced corn chips (optional) lime juice (optional)

1/8 cup extra virgin olive oil
1/2 tsp red wine vinegar
1/2 tsp smoked paprika
1/4 tsp chili powder
1/8 tsp garlic powder
1/8 tsp garlic salt
1/2 tsp taco seasoning
1 1/2 Tbsp sour cream
2 tsp whole milk
pinch of kosher salt
pinch of white pepper
dash of red pepper flakes

Instructions

Southwest Avocado Salad

  • You will need a medium sized salad bowl.
  • Slice both avocados in half and remove pits. 
  • Dice avocado by scoring each half with your knife both length and widthwise. Scoop the diced pieces of avocado out with a spoon into the serving bowl.
  • Add the black beans, Southwest corn, red onions, and sliced olives into the serving bowl.
  • Squeeze fresh lime juice over salad if desired.

 

Southwest Dressing

  • In a small bowl place the following ingredients:

              extra virgin olive oil
              red wine vinegar
              smoked paprika
              chili powder
              garlic powder
              garlic salt
              taco seasoning
              sour cream
              whole milk
              Kosher salt
              white pepper
              red pepper flakes

  • Whisk fast until dressing is smooth.
  • For serving drizzle a small amount of the Southwest dressing over your Southwest Avocado Salad and serve along with corn chips for that extra crunch!
