Gorgonzola and Sausage Stuffed Mushrooms

Mushrooms are a great ingredient. Savory and satisfying, mushrooms are extremely versatile. We could say they belong in everything. Mushrooms on pizza, mushrooms in pasta, mushrooms on ice cream… ok maybe not ice cream, but who knows, maybe we can come up with a delectable truffle ice cream for you… In all seriousness, mushrooms definitely have their place in the culinary arena.

Ingredients

20 medium white button mushrooms
1 pound mild or spicy Italian sausage
1 clove garlic
7 chopped fresh chives
2 chopped green onions (both white and green)
2 ounces cream cheese
2 tablespoons Italian bread crumbs
3 ounces Gorgonzola cheese
3 ounces Mozzarella cheese
Olive Oil
Panko bread crumbs for topping

Instructions

Preheat oven to 350º F.

In a pan cook Italian sausage and garlic on medium heat.

Once the Italian sausage is almost cooked, add fresh chives and green onions. 

When the Italian sausage is fully cooked remove from heat; add bread crumbs, cream cheese, Gorgonzola, and Mozzarella. Mix throughly (the heat from the sausage should melt the cheese).  Set aside to cool.

Clean mushroom with a wet paper towel (do not submerge or rinse mushrooms under water). Pat dry and remove the stem. Place mushroom caps top down on a baking sheet. Brush mushroom caps liberally with olive oil.

When the Italian sausage is cool to the touch, place a small spoonful of the sausage mixture on top of the mushroom caps. 

After filling the mushrooms, sprinkle Panko bread crumbs over sausage mixture for each mushroom.

Place in oven to bake for 30 mins. Mushrooms should be browned and softened.
