Ginger Pear Mascarpone Stuffed French Toast

Nothing is better than breakfast, unless you are talking about brunch; and nothing is better than French Toast, unless you are talking about stuffed French Toast. Amirite? Yes, I am.

Since it’s Wednesday, there is no better time than now to start planning your weekend brunch, and we are here to help. Well… at least help with one item.

No basic brunches here. First item on your brunch menu should be our Ginger Pear Mascarpone Stuffed French Toast. It is perfect once drizzled with pure maple syrup and powdered sugar.

Sadly though brunch may not always fit into your schedule, but do not fret, this is a recipe you can use for breakfast too. Heck, we would probably also make it for dinner! Because we all know there is nothing wrong with breakfast for dinner. Yum!

Ginger Pear Mascarpone Stuffed French Toast

Breakfast or Brunch! Do we need to say more? What we do need more of is our Ginger Pear Mascarpone Stuffed French Toast. Ingredients

12 Franz Texas Toast Bread (or any thick cut bread)
1 Tbsp butter
1 red pear (thinly sliced)
1 Bartlett pear (thinly sliced)
2/3 tsp ground ginger
2 Tbsp raw sugar
8 oz Mascarpone cheese
4 eggs
1/2 cup milk
splash of vanilla
pinch of cinnamon

Instructions

Ginger Pear Mascarpone Filling

  • Melt 1 Tbsp butter in a sauce pan. 
  • Place thinly sliced pears (red pear and bartlett pear) in the melted butter 
  • Add ground ginger and raw sugar to pears
  • Cook pears on medium heat till soft
  • Remove from heat and let cool, once cooled mix with mascarpone cheese.

Egg Mixture

  • Mix together eggs, milk, vanilla and cinnamon
  • Mix till smooth

Assembly of Stuffed French Toast

  • Dunk only one side of Texas Toast (thick cut bread) in egg mixture.
  • Place the side of the bread dunked in the egg mixture onto hot griddle.
  • Scoop ginger pear mascarpone filling on top of the Texas Toast that is face up.
  • Dunk another slice (just one side) of Texas Toast into egg mixture and place the Texas Toast on top of the pear mascarpone filling with the egg side facing up.
  • Cook till golden brown on each side
  • Repeat

Serve with pure maple syrup and powdered sugar!

 

Notes

If you are feeling like your French Toast needs a little something something, you can add 1/2 cup of Gorgonzola to the Ginger Pear Mascarpone filling. Now, you may be asking yourself, "Gorgonzola in French Toast? Who did they let loose in the kitchen?" *CoughBritCough* ... trust us though, it is truly amazing. With that being said, we also feel we need to warn you. Be careful not to add TOO much Gorgonzola! This cheese can become very prominent and can overpower the other flavors.
