Chicken Street Taco with Sweet Basil Garlic Mayo

Do you know what day it is? … It’s Taco Tuesday! 🎉 Woot Woot.

We have had this taco recipe on our minds for a while! Rather Kim’s mind that is. One day, Kim walked into the kitchen and said “Brit, I have an idea! What if we put butter chicken, Gruyere cheese, lemon coleslaw, and a basil garlic mayo… in a TACO? Hmmm? Doesn’t this sound delicious, I think it sounds pretty delicious…. Make it.” … Brit just stared (this was mostly a one sided conversation). We are pleased to present you with not just the idea of a taco, but with the actual blueprint to make this taco.

Now, don’t be intimidated by this laundry list of a recipe, these tacos are worth the time it takes to prep them. After you have finished making these tacos you may even feel the need to take the next day off of work, not because of the time it will take, but because of the garlic that we packed into these tiny delicious tacos. You wont be visited by vampires anytime soon after you bite into one of these. These tiny tacos are filled with garlic in the best way. The sweet basil garlic mayo is offset by the tart lemon coleslaw and moist buttery chicken. We are about to stop what we are doing here and head back into the kitchen to make some more.

Chicken Street Taco with Sweet Basil Garlic Mayo

This isn't your ordinary taco. Warm buttery chicken, tart lemon coleslaw, and a sweet basil garlic mayo all come together into this taco. We are in love. Ingredients

Ingredients for Chicken:
3 chicken breasts
32 oz organic free range chicken broth (do not use low sodium chicken broth)
4 garlic cloves, minced
Pinch of coarse black pepper
5 Tbsp salted butter

Ingredients for Coleslaw:
2 cups red cabbage, shredded
2 cups green cabbage, shredded
2 cups carrots, shredded
1/3 cup mayo
1 1/3 tsp whole milk
Zest of whole lemon
half of lemon, juiced
1/2 tsp granulated sugar
1/8 tsp white pepper
1/8 tsp garlic powder
1/8 tsp onion powder pinch of sea salt

Sweet Basil Garlic Mayo: 
1 1/2 cups mayo
2/3 tsp whole milk
3 garlic cloves, minced
1 1/2 tsp sweet basil
1/4 tsp paprika

24 mini street taco flour tortillas (or 12 small flour tortillas)
2 cups Gruyere cheese
1 cup Mozzarella cheese

Instructions

Brine Chicken:

  • Clean and trim chicken.
  • Pierce chicken with a knife several times.
  • In a plastic container place chicken, chicken broth, 4 minced garlic cloves, and black pepper.
  • Seal container with lid and place in fridge.
  • Brine the chicken overnight (minimum of 12 hours).

Cook Chicken:

  • After brining, place the chicken and the brine in a slow cooker and set the slow cooker to low. Cook for 5 hours.
  • After 5 hours remove from slow cooker and drain.
  • Shred chicken in a bowl.
  • After shredding add 5 Tbsp of salted butter.

Lemon Coleslaw:

  • In a medium bowl combine red and green cabbage, carrots, and lemon zest. Set aside.
  • In a small bowl whisk together mayo, milk, lemon juice, sugar, white pepper, garlic powder, onion powder, and sea salt to make the dressing.
  • Pour the dressing over the slaw and combine, set aside

Sweet Basil Garlic Mayo:

  • In a small bowl whisk together mayo, milk,  garlic, sweet basil, and paprika until combined.  

Now we can assemble the taco!

  • In a pan on low heat, warm tortillas.
  • Remove tortilla from heat, and lay tortilla flat. Spread the Sweet Basil Garlic Mayo evenly over tortilla. Fold in half and add buttered chicken, cheese, lemon coleslaw, and drizzle on top additional sweet basil garlic mayo. To keep warm wrap individual tacos in foil. Repeat until all tortillas are filled. 
  • Serve!

Notes

Prep time does not include the time it takes to brine the chicken.
